Couple of suggestions :-

Firstly how keen are you to start drinking this? if you can sit on your hands for a while then it will almost certainly improve in flavour considerably if you can leave it to bulk mature for a few months before bottling it.

Secondly how clear is it? If it's still pretty cloudy and you want it to be clearer then adding 1-2 tsps of pectolase to the DJ and leaving for a few days may well help, escpecially as you used cloudy AJ in yer recipe.

Hi, am happy to store for crimbo, but would like to see how it's come out once bottled and carbonated. Also I need the DJs for a raspberryade that I'm planning for my small keg for crimbo. To be honest I'm really pleased with how it's coming on already, it has lost most of the harshness in taste, is a lot smoother now.

It's still not too clear and to be honest I never had any great expectations on this front, as I used cloudy AJ, going to put that one down to a lesson learnt!

I'm hoping to pop into a LHBS tomorrow to pick up some brewing yeast, but that said I am very impressed with how this has come out using baking yeast - as I've mentioned before quite a good little "kitchen cupboard" experiment!
 
Bottled tonight. Had a small taster in a glass. Wow! I could have drunk a full glass of it as a still alcoholic fruit juice there and then. You get the apple,orange and peach flavours but are not overpowering. Just a nice level of sweetness from the sweetener i added last night.

I have added some sugar to the bottles so hopefully get some fizz which will make it perfect.

Very pleased, will look forward to a few glasses of this over the festive break (slowly at that strength lol).

Raspberryade for my small barrel next!
