hi all
im doing my first tc this week and have four liters of apple juice for my demijohn and a 5g packet of lalvin ec 1118 yeast which I intend to rehydrate the question im asking is the whole 5g too much for this amount and if so how much do I use

a packet usually does 23-25L, so I would use about half it it was me (I only do 25L batches)😃
 
a whole packet isn't too much.
The first thing the yeast will do is multiply. You could use less (though it isn't usually recommended) but no harm will come from using the whole packet.

I usually use a little nutrient because happy yeast means less off flavours. You can get away without it though.

I could only buy small packets of nutrient, so instead I used raisins.
I think I only put 100grams in about 10 litres, which thinking about it was probably not enough. I don't think it matters that much. I was going to make a 4-5 litre batch tomorrow and I'll probably put 100 grams raisins in that.
