I use both tropical fishtank style heater/stats and demijohn sized heat pads.Both are great at keeping the temps right.

Using heating is my big secret for faultless/quick fermentations,They are little short of a "must"

You CAN get by without them,But once you have one I guarantee you will never go back.
 
Am used to using boiling water with beer brewing; Thought it wouldnt be good for teh grape concentrate.

Going to get water to about 20 degrees in kettle before adding
