Tinned Peach Wine - my starting SG 1100

I've just started a peach wine today and I think I many have miscalulated the sugar ratios. In the fv I have two tins of mashed peaches in fruit juice, 500mls Rose grape Juice, 900g (ish) sugar and water to make up to 4.5 litres, my starting SG is 1100 - is this too high? I would like to end up with a dry / medium dry wine.

I think 1100 is great, but then I like my wine dry and 13%+
The starting gravity doesn't affect whether it finishes dry or medium, when you bang in the stabiliser does that
 
thanks I've only done one wine kit prior to this one so I'm not really sure what I am doing yet! - I prefer a dryer wine so will take careto add the stabiliser at the correct time.
 
If you like it dry just leave it until you haven't seen any bubbles through the lock for a day or so, plus a week, then stabilise purely in case you were wrong about it being finished
 
I just started pretty much the same thing this weekend.

I :nah: (SWMBO) had some dried apricots so I bunged them in as well - Anyone got any ideas whether any of thier taste is likely to come out. I only had 100grams for 2 Gallons?
 
I'm wanting to use tinned peaches in a wine soon (seems you can't get pure peach fruit juice - urgh). I was wondering which tinned peaches you've used? Is there any specific ingredient/brand to avoid when making wine from tinned fruit?

I just used the cheapest I could find. I think you need to steer clear of preservatives.

I used 2 tins of Tesco Everyday Value Sliced peaches in fruit juice 39p per tin. I had a sneaky sip (after fermentation/before adding stabiliser) and it tasted delicious, so I have high hopes for the finished wine. I am waiting for it to clear but may add finings to speed things along.
