just found a bottle of home made elderflower cordial in my cupboard, left over from last spring. thinking of putting it to good use. maybe an elderflower champagne me thinks. i have a couple of litres of white grape juice that somehow found its way in the shopping trolly the other week(funny how that keeps hapening) anyone got any ideas on this. or recipies they have tried. :pray:
 
I did elderberry champagne last year. Pretty sure I used about 6-8 heads of elderflowers, zest and juice of 4 lemons and 1kg of sugar with water to one gallon. I didn't want it too strong so hence only 1kg sugar which comes out at about 11-12% if you brew it all the way out to dry.

Method: I put the flower heads in a jam bucket and poured a kettle of boiling water over them, added the lemon and a Campden tablet and left for 48 hours, then poured it through a sieve into a demijohn with the sugar and added champagne yeast and nutrient. Once clear, I transferred it to 0.5 litre glass bottles and added half a teaspoon of sugar to each and left it to ferment out (to fizz up) and re-clear. In hindsight, it's way too fizzy so next time I'll add maybe 1/4 tsp sugar to each bottle.
