i bought 24 litres of tropical juice from tesco today. i poured it all in my plastic barrel. added in 1kg of sugar and 5tsp of yeast and 5 tsp of yeast nutrient. what i want to know is, is it ok to mix everything when the juice is still cold? please dont tell me ive ruined it.
 
You are going to be a bit low on alcohol unless that was your intention. I'm not sure what the sugar content is on Tesco Tropical but Aldi Tropical has about 101g sugar per lt. So by my reckoning you will be about 7-8% ABV.
 
7-8 % will be just nice. but was i ok mixing the ingredients when the juice was still cold? i just hope i havnt ruined it.
 
As far as I'm aware being slightly cold won't hurt the yeast (it'll just stay asleep until you bring it up to a warmer temperature). Unless it was either freezer cold or boiling hot it should be ok.
 
I made 5 litres of this stuff a couple of weeks ago, I put the juice in while still cold but after a sluggish start it got going okay. Bottled it a couple of days ago and its great, turned out about 4.7% (was 6.7% before back sweetening, it fermented really dry), its a greenish yellow colour and tastes like an overly fruity chardonnay.
 
ive done similar stuff before. it's certainly a little winey but really good once sweetened to be honest!

you might wanna watch for sugar clumping at the bottom, difficult in a 23L FV as you can't really shake it, but a few gentle stirs a few days apart without splashing around will make sure it dissolves in well.

in future just dissolve it in a few litres of water prior to brewing.
 
another thing i need to know is, im not sure whether the cap on top of the airlock has to be on or not. does anyone know?

Half the people in here don't even use an airlock, just a loose fitting lid. Hell, some even talk about the 'good old days' when they just used to leave a tea towel over the top!

I don't thing it will make any difference, lid or not but if you've got it, why not leave it in place?
 
I leave the red caps on top, they stop low flying planes crashing into your airlock (probably)
 
the airlock has started bubbling. and there is a nice sweet perfume smell comming from it. smells a bit like MD 20/20 lol. cant wait till its finnished. can someone tell me if i can leave it in the drum for a further week after the airlock has stopped bubbling. the reason im asking this is, im going to the caravan in 2 weeks time for a week.
 
so am i better to leave it formenting in the 1st barrel for a month? then transfer it to my secondary demijohns after that? then leave it for how long in them?
 
You are making a Tropical turbo cider really so I would follow the TC guidelines. Leaving it in the FV for an extra week or two will do it no harm. I'm not a TC maker so can't really advise on the length of time to condition etc.
 
ive got the drum in my bedroom formenting away and i can smell the alcohol. is this gas poisonous or harmfull if i keep it in my bedroom?
