Hello Brewers. What is the lowest temp that a beer will ferment. My brewing environment has dropped to just over 16 degrees. I've bunged the fish tank heater in to help. It's a kit. St Peters ruby red ale. This is my 5th kit and yet to get a good abv.

18-21c is the ideal range I believe with that kit, but going down to 16c won't harm it, just takes a little longer

I need to nip up the brew shop and get me a big box of patience.

or some more kits to do say one every week till the first one is ready then you have a continuios stock
much beter than waiting all that time

I didnt want to start a new thread if there was one i could jump into.

my first brew.

my fermentation tub is under the stairs. it is in the center of the house, away from radiators. it is cool, not cold and has a constant temperature. i should get a thermometer in there but it seems to be the same temp whatever the weather or time of day.

i understand things might take a bit longer if the temp is below optimum but i am worried if i leave it too long the beer will go bad. should i worry?

I don't tend to worry, my temperature does fluctuate a fair bit, but I've yet to have a bad brew... and some have been left in quite a while due to one thing or another...

Stop the guess work and stick a thermometer in there - check it at various times of day and get an idea of the average temperature.
If it's a bit on the cool side (below 18) you might want to think about some kind of heating, there's plenty of options....

a good option would be the aquarium heater in a tray of water with the fv in sitting in there too. Sick a thermometer in there too and get it to 20c.
