There only two really useful bits of advice I've been given on tax.

1) Be utterly meticulous in your record keeping.
2) Pay an accountant to do the rest.

+1 from me, especially 2). They will advise you to constantly put money aside from every sale so that when they tell you how much Customs and Excise want from you, you've got it all neatly stashed away in an account and can pay it straight away.

If you do that, make sure only you have access to it and not your soon-to-be ex-wife as said account can miraculously become very empty leaving you trying to find a huge amount of cash to HMRC (and they have nooooo sense of humour at all)
