So the first brew is done nad has gone down a treat. I only have about 5 bottle left. Lots of compliments from those that have tried it. But...I found that the initial taste was a bit sweet. And it really had a big head when pourde. Have I added too much sugar to the bottle to prime?

I'm not an expert but I hear that over carbonation can give it a huge head and a foamy quality?
 
What was the final gravity? This will tell you if there was lots of residual sugar left. If you over primed then the beer will initially be sweet but the sugar will eventually ferment out leaving very gassy beer.

Was it a kit or AG?
 
@crE - I used 1kg of brewers sugar for initial fermentation then 1tsp per 500ml bottle for conditioning. I did have an interesting time bottling though. So nit all the bottles were filled to exactly 500ml.

@rpt - the fg was 1.020 and it was a kit. Art of brewing xxxx Ale.
 
a final gravity of 1020 ? no wonder its sweet. it hadn't finished fermenting.

You should get down to 1012 or 1010
 
IMHO I would get those last5 bottles drank very quickly! 1tsp of sauger per 500ml bottle is a lot anyway, but to bottle at 1.020 it may not have finished fermenting.

I only use half tsp per 500ml if it has dropped to about 1.010 or lower, if it seems to have stopped a bit higher (1.012-14) then I'll add less priming sugar. I wouldn't bottle at 1.020.
