Once fermentation has finished leave it for 7 days then rack into a sterile DJ onto a crushed campden tab, add stabiliser and finings if required, once clear you can age it in the DJ under airlock or bottle it.

For the first time in a couple of years I started a WOW at 5pm this evening using Lalvin EC-118 Champagne yeast. I took the sugar level up to 1080 with a view to getting a wine of 11% so I can try sparkling it at a later date.

Only two hours later it has half an inch of foam on top and its currently bubbling at 13 bubbles a minute. This must be one of the quickest starters I have had ever.

What juice did you use?

I started 3 DJ's of apple/Raspberry and WGJ last night and they are now bubbling at one bubble every 45 seconds, its now only 15c in the kitchen (was in the high 20's in summer) so i am expect they will take an extra day or two to finish.
 
I'm going to give WOW a go, but I have a newbie question :)

If I wanted to make cranberry and apple, I would mix 1ltr of white grape juice plus 500ml of apple and 500ml of cranberry (not forgetting all the other ingredients) ?

Sorry if this is pretty obvious :? , and thank you in advance for any advice!

Hi acott, welcome to the forum.

If the apple juice is 100% juice it will be fine, if the cranberry is not 100% juice it may not taste much of cranberry when it is finished, you could try 1 litre of WGJ + 1 litre of 100% apple juice and then add the 500ml of cranberry on day 3 or 4 of fermentation so the wine does not lose too much of the cranberry flavour.

Tesco do a range of apple juice which is 90% apple then 10% of another flavour, my favourites at the moment are 1 litre of apple/mango and 1 litre of WGJ and 1 litre of apple/raspberry and 1 litre of WGJ.

I have edited my earlier post to say -

When I read it again before editing it looked like I was saying put all four litres together in one DJ but its actually two separate recipes.

So I finally started off an apple/raspberry wine yesterday, going well so far! It's bubbling away like a good'un and I can't stop opening the cupboard to watch it and giggling like a child with a new toy :lol: :D My hubby thinks I've gone a bit mad! :tongue:

Just one question - the Apple/Raspberry juice I bought was 88% Apple and 5% Raspberry puree. Is this enough Raspberry flavour? It was the highest juice content I could find.

Don't think it will be long before I start off another one, might go with the original orange this time. Just need to find a better source of WGJ - could only find 750ml cartons in Tescos (everything else was 1ltr cartons!) so had to buy two.

The tesco ones I am using are 90% apple and 10% raspberry, I end up with a wine that people have described as white wine with a hint of raspberry, I don't want alcopop so this is perfect.
I think you will find its fine even at 5%, if its a litle weak try something like a cranberry or a pomegranate juice that is close to 50% juice in your next one with WGJ, these are very popular wow variants.

When i started i used to use 800g in everything, i then read on the forum that you should aim for a total sugar content of 1100g, subtracting what is in the cartons from 1100g gives you the total you need to add to get roughly 13% alcohol.

I have now dropped this to 1000g which is roughly 11% as Mrs Tea found it too strong and to be honest i haven't noticed the difference.
 
Just picked up some Aldi Winter Punch Juice. They had 2 different types. The other was mainly orange, but as this was apple based, I thought I would give it a try. The carton says "Product does not contain alcohol". We can soon see about that. Planning on turning it into alcohol next week. The ingredients are:

Apple juice from concentrate 40%
Apple juice 34%
Grape juice 10%
Sour Cherry juice 4%
Elderberry Juice from concentrate 2%
Water
Ascorbic acid (Anti-oxidant)
Flavouring - Not specified
Total sugars - 113g per lt

Just bottled this tasty little WOW, and on my 3rd 'taster' glass :shock: :

2 litres WGJ
I litre ASDA Pomegranate drink
700 gms sugar
Nutrient, tannin, citric acid, pectolase, lalvin all-purpose yeast
About 55p a bottle! :)

Just like a pomegranate TC I just did, the wine has a lovely, syrupy mouth-feel and a nice touch of sweetness( probably the added sweeteners in the pom drink ). The pomegranate juice must be responsible for the smooth mouth feel; the wine is loaded with glycerin though none extra added. So much if the glass is tilted then righted the film actually forms 'dribbles' on the glass. Good vinosity and a good one to quickly knock up. A slightly blush white in the glass, though ruby in the DJ.

This will not last long
 
Because of another drought of WGJ, I'll try a Pomegranate with welches white grape and peach, there is plenty of those.

With fruit juices my two favourite are Pomegranate with White Grape Juice and Blueberry With Red Grape Juice
