I made my first kit wine last year and since I've just cleaned out my entire wine stock I decided to put another 5 gallon kit together for something to get ready to drink quick. I bought a 5 gallon Beaverdale Shiraz kit and on starting it today I see its not a quick ferment like the last kit I made which was ready to bottle in just 6 days.
Is it possible to get a super yeast with added nutrient like these kit wines use that ferment out in 5 to 7 days or is it all down to what is already in the kit in the way of grape concentrates?
 
Grape juice/concentrate is the perfect environment for yeast/fermenting, so does not need nutrient etc.
It's all down to patience if you want anything like a decent wine!
 
If you fancy a go with supermarket juices which ferment out in a week or so have a look for the WOW - Wurzel's Orange Wine - recipe or one of the threads with variations using Fruity teabags with red or white grape juice. Not the same as a kit wine at all I expect but they are easy, quick, cheap and many have given them a big :thumb:
 
What am I doing wrong? I have WOW on now and its never going to be ready in a month let alone a week. The grape wine kit I got last year was the fastest ferment I ever experienced 5 days from pitching the yeast to dryness. It was cleared and bottled on day 7.

For the wurz I got the grape and the orange juice from Tescos. Its fermenting gradually like any country wine. I never get this great explosion and sizzle they all refer to.

Anyone had any experience of the Beaverdale kits and whether they are any good.

I don't think you are doing anything wrong with the WOW if it doesn't gush out of the bubbler! There's a lot of things can dictate how fast or furious your ferment goes, like temperature for example, but it does seem to include, as Samarith I think it was said, if Mercury is in the House of brewing or not.
