I am going to brew this tomorow :party: I have just commisioned a larger boiler, so not to be too ambitious i have planned for 31 litres which will fill a youngs fermenter to the shoulder im hoping the Krousen will syphon off via a tube & with it all the nasty stuff (an experiment just to see if it makes a difference :wha: ). my aim is to produce something like Fullers Honeydew. will my recipe come somewhare close :?:

Pale malt 6.000kg
Chrystal malt 180g
Honey 800g 2 x jars

Hops Chalenger 7.5% Alpha 45g 32 IBU 60 minute boil

Yeast Safale s04

mash shedule 120 mins @ 66 C Estimated OG 1.052

I've not tried Fullers Honeydew but I am partial to a honey brew. I once did a comparison of my brew against Waggledance and Bumble Bee.

I've tweaked the recipe a bit since then - you can find mine here. Notice that the percentage of honey I use is much higher that you are proposing :thumb:

For what it's worth, I'm pretty sure that Youngs have changed the recipe for Waggle Dance. I used to enjoy it a lot when Vaux made it but I'm not so keen on it at all these days.

Brew sessions gone pretty well :party: , 31 litres in the FV :party: i added the honey during the last 15 minutes of the boil in the attempt not to spoil the delicate honey flavour & at the same time ensuring sterility, I dont know weather it really makes a difference :wha: I did some calculations regarding the gravity of the wort befor boiling & adding the honey, what really suprised me was the OG of the end product with the honey added, having started with a pre boil gravity of 1046 I ended up with an OG of 1060 so i think there must be a lot of sugar in honey I think I might have to adjust this :wha:

I'm pretty sure i've heard about priming with honey too to get it really coming through!

Funny you should say this James when i was doing some "essentual reserch" :drink: : :grin: prior to this brew I was convinced it used to be a lot better :wha: fullers honeydew is better in my opinion :thumb:
 
I tried the Fullers Honey Dew. I liked it very much. Would like a little more sweetness. THe wife and i enjoy sweeter beers. Have look for recipes. Can anyone help? I think this could be interesting as a base beer for strawberries, apricots. We don't care for the bitterness in over hopped beer. but, like balanced and malty beers.

Do you brew all-grain? - If so, try mashing at a higher temp (e.g. 68C) to get a sweeter result (albeit less alcoholic) :thumb:
