I again opted to re-brew one of my previous brews.

I brewed a Scandinavian Sahti beer again.

Used some Amanita Muscaria Mushroom in this one too, as I really liked the flavour it gave my previous attempt.

The warm glow, slightly racy thoughts and energised mood that a few pints of this gives, makes for a nice beer. No more than 3/4 of the 440ml Grolsch bottles should be had at a time.

USED INCORRECTLY (non-decarboxilised) THIS MUSHROOM IS A POISON, DO NOT ATTEMPT USING THIS.

I used roasted wheat instead of rye this time. 20 min @ 160`C.
Went with some Carra-Red.
A bit of Roasted Barley and the base Pale Malt.

Brewed normally. BIAG style.

Hopped with 2g Juniper Berries/litre and some Brambling Cross to smooth it out.

A strong tea was made from the roasted Amanita Mushroom.

At flame out, the two elixrs were combined and cooled.

Fermented with Alt-yeast.

Still to be primed, but I am hoping that the decrease in Juniper Berries would make for a slightly better tasting beer with less of an aftertaste.

What's the general guide for Juniper Berries ? Is it as potent as hops gram for gram ?
 
I guess the mushrooms did him in or he's gone beserk. :grin: The link does recommend brewing without. Maybe there is a reason......... :wha:
 
No, No, No, Not poisoned at all. I know and use this mushroom often.

When the mushroom is properly prepared, ie de-carboxilised, the poison present in the mushroom is altered into a pscychoactive component responsible for the pleasant effects. If not, then some bad times would be ahead of the inexperienced user making the mistake.

The warning was to ensure in-experienced users do not make the mistake to utilise this.


I had a taste-test from the last bottle filled (which only got to about 60%). The use of wheat i.s.o rye was a good call. The typical ever-so-slightly sour wheat taste blends well with the unamii-taste of the mushroom and is balanced by the Juniper berry taste.

The end-product is much closer to, what I perceive from literature, the proper ancient Viking beer would have been.

Enjoyable, but I'll stick to two at a time on an empty stomach.

The reason for the link suggesting not to include the mushroom was either for legal reasons or something to do with the type of characters pulled to the website "brewgeeks.com".

I, for one, can not think doing a brew like this and not adding the ingredient that makes the brew.

A medieval taste of vikingness. Mmmm :drink:
