I made a very strong (purposely to get my mate as drunk as he could get - he didn't believe homebrew could be drinkable). Anyways I made a 11.5% cider, I can't remember how many litres it took, but essentially I ended up with a DJ full of Apple juice from morrisons. I boiled it down to the desired sugar levels (again can't remember how many it took to get 5L, probably 7 or 8 or so). I added additional sugar to take up the ABV and kicked off with a champagne yeast. It went like the clappers for 2 weeks. I bottled and primed - it only had 1 week to prime, and upon drinking initially (around bonfire night) it was extremely sweet because most of the sugar hadn't been used up yet), however I cracked open a bottle tonight and it was extremely pleasant.
I'll be making another batch or maybe even 2 of this, and using it as a fizzy apple wine / strong cider when the occasion demands. I know not a "greatly" detailed recipe, but hopefully someone else can complete the maths! ) I was expecting it to be crap, given my goal was a high ABV, but I ended up with a very nice drink.
