stout with shredded liqourice

Planning on making a stout tomorrow.

Was thinking about using the recipe for Wheeler stout (from the graham wheeler books) and then adding a bit of schredded liquorice to the boil.

One recipe i have seen uses 28g for the last 20 minutes.

Would this seem about right in 25L? Has anybody done this before on a regular basis?

Not regular, but sometimes to porter or stout. And smaller amount, like 15 gms for 20 litres. Flavour is there, but not very prominent. If you like it, 28 gms might be right.
 
I always say to add these things post ferment as you can judge how the finished beer is tasting and if need be pull out the liquorice. There is a lot of difference between how the wort is shaping up and how the beer actually tastes once all the sweetness has been taken away after fermentation. :thumb:

I've never tried to make it before, but this makes sense.

I wonder what would happen if you added it at bottling? Do you think it's too sugary and would screw up the carbonation? If not, you could maybe add a liquified version of it to your taste.

I've had some of these beers up in Scandinavia and they were amazing.
 
The problem with that is not only will it effect carbonation but you won't know what the final outcome is likely to be. All spices and herbs are usually ver concentrated in flavour so judging how much to add is difficult. It is better to air on the side of caution.

I'm a little confused. If he added it at bottling, couldn't he just add a little and then taste it -- add a little -- taste it, etc. until it tastes like what he wants?

It's probably still a bad idea because of the sugars, but it's a thought. Maybe it would work if he was using an extract that didn't have sugar?
 
No because the flavour would leach out of the licorice over time if you were adding a chunk or using licorice root. I have presumed a lump or piece of root was being used, but it would probably work if a syrup was being made from a piece of licorice candy or a tea from a piece of root, but if you are doing that then you may as well add in the secondry.
 
Went at the finish for 20G and 27Litres

Because its sweet stout it a good quick drinking recipe. Its come out absolutely banging!!!!!!!!!!!!!!!!!!!!!
Honestly one of the best beers i have ever brewed. Getting popular with the neighbour
Just got to make sure at 6.5% i dont get carried away and drink too quickly

Well done. Make sure you put 6 bottles aside and forget about them for 6 months. You will wonder why you didn't keep all of them back. :whistle: :whistle:
 
Brilliant ! i have about a KG of the shredded stuff and think i'll do a couple of brews after xmas for Paddy's day.
Could you post the exact recipe you used on here please.?
I am also thinking of doing and Alcho root beer type cider thing with some too - maybe a blackcurrant and liquorice one?? :cheers: :thumb:
