Barley:
I have chocolate malt, crystay malt and maris otter

Hops:
I have Cascade, Fuggles, Challenger

What is a good recipe for a tasty stout i can make with the above ingedients, what weights of barley would i need of each to fit a 5.5/6kg mash tun
 
you are going to struggle with that lot to be honest. A basic recipe for an Irish stout is using the 7:2:1 ratio for 7 parts pale malt to 2 parts flaked barley to 1 part roasted barley. Basically without the roast barley you won't be able to make an authentic stout.

However, how about a porter? For a 23l brew length you could try 4.5kg Pale Malt, 250g Crystal and 250g chocolate malt. If you have some wheat malt or oats (porridge oats will do) you could throw 100g each in the mix to help head retention and mouthfeel (imo :whistle: ). At around 70% efficiency this should deliver around 4.3%abv.

Hop character isn't so important for the dark beers but I would stick to either the fuggles or challenger.

Maybe try roasting the oats?

I made a porter recently with 5kg pale, 300g chocolate, 300g crystal and 100g black, plus a kg of oats. It turned out a tad on the bland side so I'm planning on roasting my oats (oo-er) next time.
 
Roast barley also goes great in surprisingly large quantities if you can get some in a hurry. I accidentally over-ordered and had 800g sitting there annoying me for a couple of months so I whacked together a stout with 4kg Halcyon, 750g supermarket oats, the 800g roast barley and 500g sugar. It's turned out really tasty and not at all 'burnt' or astringent.
