hey guys. i have just racked my first two dj's of wine and now i want to let it mature for xmas. whats the best enviroment for maturing the wine cos i was thinking of leaving it in the shed for the next few months but if we get a frost will it damage it?
thanks

Ideally, your wine should be stored somewhere cool but not cold, but the important factor is that the temperature should be fairly stable. An insulated box in your shed might be suitable, but how does the temperature swing between day and night? If you can find a cool cupboard under the stairs or somewhere else in the house, that might be preferable.

I store mine in a cupboard under the stairs, it doesnt seem to vary summer or winter, Dave NE
