Steeping vs Dry Hopping

Have collected all the ingredients for AG No.2 which is going to be a Big Kenny (Wez Classic) with a slight aroma Hop change. i Will be using fuggles instead of bobek

As i don't have an immersion wort chiller yet and am relying on nature to cool. i think i will have a problem with steeping the aroma hops at 80deg for 15 mins, so was thinking of dry hopping instead. Can someone tell me what the differences i should expect in the final product.
 
I'd go with adding them at 80c and let it cool naturally :thumb:

It'll work just as well, the reason for adding them at 80c is any hotter it is thought that the steam carried away the all important oils the rate it cools after is irrelevant.

I don`t have an immersion chiller either and my first few brews just had 90min and 10min boil hops - the first brew i did with steeped hops (challanger and northdown) was so much more flavoursome, I let the brew cool after the boil for a liitle while - it probably wasn`t down to 80degrees c and after a 30min steep drained the boiler and let the wort cool in the garden as usual ( no probs yet) the difference was amazing you could really taste the hop profile and flavour. I`ve dry hopped one brew that worked really well as well - but i haven`t done enough brews to work out which i prefer - yet :lol:

I find the aroma come through better dry hopping for 5 days. :thumb:

I did a BK and pepped it up to 6% with Lyles, cracking stuff, gave bad headache though....
When I do it again I'm sticking to the normal recipe!

Steeping will add some flavour (but no extra bitterness) and aroma, dry hopping adds aroma :thumb:

WIll do wez looking forward to this brew. Thanks for the info regarding steeping. I was thinking if i took to long to cool i would impart to much flavour. But now i know otherwise
 
does letting it cool naturally cause any issues with clarity or taste , I hear from the purists that it causes lots of issues ( having said that these same purists have probably never tried it ) :) .....
how long would you steep the last hop addition ?

From my limited knowledge rapid cooling is meant to assist a cold break which will remove certain protein(s). If you leave to cool natuarlly these are not normally removed effectivly, and may lead to chill haze. But on my first and only AG so far i could see no signs of poor clarity and i also forgot about the irish moss so i think i may have been lucky. I think the steep hops should be left for 15mins normally.

Note all what i said above my be rubbish, like i said i have limited knowledge :)
