Hi there,
Well I've tried to brew a couple of times before but its gone pear shaped for several reasons really. I tried to make some lager using a Young's starter kit which worked fine but I think when we were bottling it we shook up the sediment and put it in the bottles, the lager tasted slightly flat and there was something not quite right about it which we couldn't figure out. I then found a kit for making gin and put a little more research into it this time, although I think something got into it because it tasted and smelt vinegary, so bad that I had to throw it out! I am brewing up a dark ale (again from a kit) the first fermentation is done although after thinking I could take a cheap option and use some demi-johns I already had as a pressure barrel but I don't think I've made the 'sample' demi-john air tight enough as it looks flat and lifeless.

Anyway, that's about the stage I am at, at the moment. Does anyone have any links, or could help me out with a list of equipment I would need to brew ales and maybe the occasional wine? Also any suggestions for what I should try next would be greatly appreciated :D (as simple as possible, it'll need to be MORE than idiot proof I am quite a talented idiot :wha: )

Looking forward to get more into it :drink:

sounds like you didnt prime bottles thats why it was flat. I would not shake bottles either when you bottle the beer should be treated gently when bottling. Your basic equipment for brewing kit beers would be

5 gallon fermenting vessel
thermometer
hydrometer
syphon tube
bottles or barrel
steriliser

and the kit of course all the info you need is on the forum

Welcome on board! :thumb:

If you're after simple kits, try any of the standard Coopers range, they're very good and I've never had one fail, done about 20 so far I reckon. Their Dark Ale & Stout are both very good.
What do you WANT to brew? Always the best place to start is to know what you like... :hmm:

Thanks I'll have a look through the range. I would like to get to a point of mashing myself and experimenting with different flavours of ale. I'm quite partial to a dark ale so think I might try a Coopers kit of that. Would be nice to get it for Hogmany as well :D.

I've got a barrel, well... half a barrel... of Coopers Dark Ale brewed with Extra Dark Spray Malt at 50/50 with brewing sugar, if you like it chewy, brew it a little shorter... but it's a good solid brew. :drink:

Sounds good, with adding malts can it just be straight up swapped for brewing sugar? i.e. 900g of sugar = 900g of malt?

Not quite a straight swap, more like 900g sugar = 1kg spraymalt.

I've brewed that Cooper's Dark Ale a couple of times with 500g spraymalt + 600g sugar and it worked out well.
