Well after months of possible recipes floating around in my head and me finally getting all my supplies from a brewing shop in Glasgow a couple of weeks back i brewed up. I've called it strawberry wine but i've used a couple of litres of grape juice as a base, plus plain water and strawberries.

Mixing and cooling:

Into the FV (whould have left it in the bucket but lack of space!):

I actually used tinned this time, since strawberries are out of season just now i figured the fresh would be lacking in flavour. 2 tins in this batch - i've written down exactly what went in so if it works and tastes good i'll be able to do it again the same.

Racked today into a new vessel. Smelling like wine, but VERY strong. Starting to clear up a little.

i wonder if the extra alcohol comes from all the sugar in the syrp the strawberries come in?

Is that the starting gravity? If i read my hydrometer correctly it was 1076. Does that sound about right?

Its just about finished fermenting, only a bubble every few minutes coming up through the airlock.

yes, i had a thread about it being bitter somewhere on the forum. I bottled it, hoping that after time it will mature out.

I haven't tried tinned strawbs yet, and fresh are usually stupidly expensive (must get into the supermarket at mark-down-the-old-fruit time), but I've done strawb wine from frozen (6lb bag from Costco). Haven't tried grape juice as a base, have had good results with just strawbs and with strawbs+rasps.
