Spiced Apple Wine Should it be bubbling?

Hi, I was wondering if anyone could help?

I've got two batches of Andy Hamilton's Spiced Apple Wine on the go, with a slight variation in the method between the two to see what difference it makes.

All went well in the brewing buckets and they've now been in demi johns for 12 days but they haven't bubbled since going in.Presume they're supposed to so should I treat it as a stuck ferment?

The mixtures are still cloudy and show no signs of life.

Any help would be appreciated. Thanks in advance,

Some buckets are not air tight and the CO2 escapes at the seal, the only way you are going to know for sure if its fermenting is to take readings over a couple of days with a hydrometer.
 
Sorry it's taken a while but I've got round finally to taking two measurements from each dj.

5/11/14 DJ1 : 1.26 DJ2 : 1.00 DJ3 :1.00
9/11/14 DJ1 : 1.24 DJ2 : 1.00 DJ3 :1.00

Possible misreading on DJ1.

Do I take it that the ones reading 1.00 are ok to bottle but I should wait a bit to see if DJ1 comes down to 1.00?

Any help appreciated as I'm figuring it out as I go along here! Confused a bit as to how to use hydrometer.
