Something different to brew

Morning all,
I think my palate is having enough of the IPA world now and my taste buds have had enough.

I have been looking around to brew something a little different, something easy drinking but with flavour. Not into stout or dark ales etc.

So please hit me with what I should brew next

I know exactly what you mean. Me too when it comes to American IPAs, but what about nice hoppy English beers. It's a shame you don't like dark beers as I've developed a recipe for an amazing mild that runs out below 4% abv and is full of flavour. I'm looking forward to getting the lager on.

Kolsch is a delicious style and will make a nice change from hoppy beers. Beautifully subtle and easy drinking.

I don't think I've ever had a Kolsch, let alone brewed one. Can you recommend a recipe?

My best kolsch was my first one and a dead simple recipe:

92% Pilsner malt
8% Vienna malt
Mash at 65°c
Aim for around 1.048 OG

Hallertau Mittelfrueh first wort for 25 IBU

Fermented with Wy2565 - Kolsch at 16°c

I love a witbier. The last one I did was probably my favourite brew to date, although that’s probably because it was the first beer I kegged.

How about a californian common (like anchor steam beer). Easy to brew and easier to use drink!

@An Ankoù Would you be willing to share? Mild is on my mental 'to do' list and I was going to do one of Greg Hughes' recipes, but you've piqued my interest

My last brew was an English bitter to mix things up a bit and I’m really enjoying it.
