Hi guys. We recently brewed up a nice watermelon weiss. Partial mash and extract. After primary was complete we added 10 cups of fresh watermelon juice (according to a recipe I came across). Fermentation kicked off and it was bubbling for one day before stopping again. Three days later I dry hopped and bottled 3 days after that. The beer have been bottle conditioning for 3 weeks now, and it tastes rather good, but will definately be better if matured some more. Now for my problem... Some of the bottles we opened were carbonated perfectly, some of them fizz when you open it. Looks like the sediment is an effervescent tablet... After pouring into a glass it fizzes for a little while then slows down. If you drink it, you can feel it bubbling in your mouth and down your throat... We use carbonation drops, so all the bottles are primed the same and we double check the drops in fear of having a bottle bomb in the wife's laundry room... Some advice on this please, smart people!!!

I use sugar for priming and haven't used carbonation drops myself but it sounds like maybe some of them didn't fully dissolve and ended up in the sediment?

Watermelon Weiss sounds amazing. Must give it a shot.

Too fizzy beer is a talent of mine too 🙋
