some advice on my first ginger beer brew

I have made a strong ginger brew should come out at about 11/12% it should be done in a couple of days i think, now having only ever made cider "kits" brew im really not to sure how long to leave in the bottle for the 2nd fermentation and i cant seem to find the info anywere, so please any helpwould be good dont know if it makes any diff but the recipie is as follows


6 limes
4 lemons
2.5 kg of fresh ginger
4 kg of caster sugar
1 kg of muscavado
800g of honey
yeast
nutrient
cream of tarta
3 tsp of cinamon
 
My ginger beer still smells "eggy" and I bottled a good 6 weeks ago! It will always get better with age, but I think when using fresh ginger, you need to leave it as long as possible.

However, others on here have had better results with fresh ginger and have been drinking it a lot earlier.
