Hi, I'm going to probably be looking at a final batch size of 10 litres which is much less than the 5 gallons my dried yeast says to use in. With it being 11g packet do I just scale down the amount of yeast I put in?

I'll probably be putting into a number of DJs so something just less than 5L will be the fermenting size so do I just put roughly 1/5 of the 11g packet on each?

Another thought was to rehydrate the yeast and add a pro-rated amount in millilitres. With the excess rehydrated yeast, would I be able to keep this alive (perhaps in a jam jar) for the next batch or am I best only rehydrating what I need to use.

2 grams per gallon. Only rehydrate what you need, store the yeast left over in the packet in the fridge. I fold it, squeezing the air out, and sellotape it.
