Hi guys.

When you transfer the wort to secondary fv from primary, surely this removes the protective layer of CO2 over the wort? How does it not spoil? I can't get my head round this, surely it is at risk of spoiling? How long would you then leave it before bottling?

while your racking any co2 that is already dissolved in your brew is released to form a thin layer. and it may cause the yeast to wake and have another go at any sugars that are left
 
there is plenty of co2 still in the beer which will come out of the beer so a new layer is formed. :thumb:
 
Good question. My experience is that after racking the wort still has enough C02 to exert outward pressure. So the protective barrier is still there or recereayed by C02 released from the liquid when rackung ng into the new vessel. If you are still worried a good way to test this would be to place a baloon over thehole of your secondary vessel. You will notice it inflated even if just a little. As with everything else make sure your baloon is sanitised :-)

So that's why after kiwi wine stopped it started after I racked it. Learn something new everyday.
