Spent an enjoyable afternoon in the kitchen today and thought I'd post up. 2 lots of stuffing John Torrodes Red Currant and boozy orange and Merchant Gourmets Chestnut stuffing (used to be on side of Chestnut puree tin...now long gone)...the only stuffing the father in law has eaten and enjoyed other than paxo :shock: ... :lol:

Then some of Jamies get ahead gravy, 1st runnings shown, did a second runnings and upon testing we decided we liked a 2:1 mix of 1st and 2nd. Recipe done slightly differently as we processed al the ingredients after simmering and it makes a great improvement on the original. Also reduced the star anise to 1 as too strong last year with 2 :roll: Not sure if we'll use it but it's there if we want it :cool:

Well beyond the cakes now and into Christmas dinner proper. Doing the typing on the computer - pics are on the phone so I'll edit them in shortly...

Stock on the go - the giblets and necks from two turkeys and a cockerel plus all the usual stock goodies:

A mahoosive ham for boxing day, boiled in apple juice, then baked and glazed with 3M's glaze: Maple syrup, Mustard (dijon) and Marsala.

And the main event - one Copas Turkey, free range, organic and game-hung for 21 days. Stuffed with homemade sage, onion, cranberry, apricot and chestnut stuffing.

I've got a gammon joint to do, love the idea of boiling in apple :hmm: ...is it a 1.1.1 ration on the glaze....might try it :whistle:

No idea on the glaze, I just kind of make it up... Needs lots of mustard though. Glaze about 30 mins from the end. Baste it a good few times too.
 
the wife's and partner's of forum members have got a very easy life. Our members are brewing hard all year and even find time to do the baking and cooking......Take a bow gentlemen.


I bet Mrs V, has just blown another gasket !..... :shock:

Right, I just glazed it and it went...

A good slug of maple, I'm thinking it was maybe three table spoons. Then about a finger and a half width from the Marsala bottle and four big teaspoons of Dijon. Bubble the alcohol off on the hob and lash it on...

This avo's work...better late than never, 2 xmas cakes to be iced and decoration in progress. We don't like the icing or marzipan too thick hence very visible nobbly bits :lol:

Calum, I thought that first pic was the brussels already boiling away, untill I did the reading, :lol:
Off now to give Mrs.S a hand or I will get my Christmas boll...ing, "wasting time again on that forum", maybe start on my Christmas blonde ..............that I brewed for the seasons festivities. ;)
Only way I will get anywhere near a blonde. :lol:

My mum made this Gordon Ramsay honey glazed ham tonight, its tremendous, don't think the bugger will last until xmas day! stunning man! she had a mis-hap last year thinking she had a ham, after boiling she thought thats the wrong colour, turns out she bought a pork the daft auld bast4rd! :party:

The Turkey goes Last Tango in Paris :whistle: ...the pancetta lattice, pigs in Italian blankets, and red currant stuffing pancetta thingies :lol:

Sorry to hi-jack this thread but the wife's made a trifle to take to my daughters tomorrow but the jelly won't set, used 2 lots of gelatine, any ideas.
