Hi, I doing a new zealand pilsner using saflager w-34/70 should I use 2 packets of yeast for a 23 litre brew, it states on the packet 11.5g in 10 to 15 litres and temp range 9-22 ideally 12-15. Does the temp matter as I can do either in my fridge. I'd just have to move 43 bottles that are conditioning. Cheers all
 
If you are fermenting a lager yeast at the lower end of the temp scale it is best but that is not cast in stone as some brewers have done good lagers at the higher end. Me I would do the lower end if I had temp control

Boiled off too much?
Used a bit more malt than expected?
Better efficiency?
Temperature of wort when measuring OG?

Many variables, but it's only 4 points so not likely to make a lot of difference, especially since you don't really know where the FG will end up.

Might be my first AG balls up, added 2 packets and it's already bubbling after 2 hours. Will it be OK
 
Perfectly ok. Keep the temp close to 10C to keep the brakes on fermentation, once you get down around 1.020 start to let it come up 1degree a day until it hits 18C, leave it there for 4-5 days and you’re done.
