Better and easier to make a dip stick out of doweling. It will get steralised every time you use it.
 
I measure the headspace in my boiler to calculate how much water. I just use a B&Q stainless steel 30cm rule to measure the distance from the top of the boiler to the top of the water. Ruler barely gets wet. I use the BIABacus spreadsheet and this gives the headspace for all the volumes. You just enter the kettle diameter and height and it works it out for you. You can also make adjustments if your boiler doesn't have a flat bottom.

Yup, me too. The best way to do this is to add a known amount of water, say 10l to your pot - make sure it covers hop stopper, elements and other fittings, then measure the headspace and internal diameter of your pot.

Total Volume = known volume + (Pi * (diameter/2) * (diameter/2) * headspace)

Once you know your true total volume you can just use:

Wort volume = Total Volume - (Pi * (diameter/2) * (diameter/2) * headspace)

Better still, (Pi * (diameter/2) * (diameter/2)) is a constant which gives litres per cm. My pot is roughly 1.55l/cm of headspace so my on-the-fly calculation is:

wort volume = 69 - (1.55 * headspace).

Simples!
 
Even easier is to put 10L in and measure the headspace. Then add, say, 2L and measure again. Then another 2L and measure. You should now know how many cm each litre is.
