I'm currently making my first attempt at cider from apples. I'm a complete newbie so would appreciate some advice. Let me tell you what I've done so far.
4.5 gallons of apple juice, 1060 o.g., which fermented with an airlock for about 10 days before it stopped bubbling
I then left it for 5 days and was going to leave it in the primary fermenter for a few weeks before bottling but was told to take it off the sediment as this could spoil it. As I didn't have bottles on Sunday when I did it I put it into another fermenter with 50g of sugar and again out it under an airlock. It bubbled almost immediately for a day and has now virtually stopped, two days after racking. It was about 995 when I racked it, tasted nice, if not quite dry, and pretty clear.
My question is, could I have or should I have just bottled it straight from the primary, given it was nice and clear. Seeing as I haven't done that could I do it now 2 days later or do I have to leave it a week or two in the secondary fermenter before bottling. The thing I am most worried about is the air gap in the 5 gallon fermenter seeing as I only have 4.5 gallons in there. If thsat's not a problem I'm perfectly happy to keep it in there but if it is I was thinking I should bottle it so I can fill each bottle up and eliminate any air.

im currently making turbo cider and i put it into a secondary demijohn at the weekend. It is clearing now and when it does ill bottle it. So you should be ok

i put mine in a second dj as well and it started to clear pretty well and its only been 2 days and u can almost see through the cider

Well, I have bottled the cider tonight. It is still a bit cloudy but I'm not bothered about that too much. I put it in two litre fizzy pop bottles with 3 teaspoons of dextrose. I had a few pints left after i ran out of bottles for drinking tonight whilst watching the football. It tastes really good even at this early stage so should be spot on by Christmas. Good luck with your turbo ciders.

I bottled today, one of my bottles was cloudy think i put the syphon tube too close to the bottom of the dj im not going to worry about it though yours will be fine :D
