hi all,
i want to give my beer longer to condition post primary. i intend to siphon of the trub into another fermenter. should this be kept at active yeast temp (about 20 c) oR in the cool? how long should i leave like this? thanks

It depends on what you are trying to accomplish by doing so.

I don't tend to secondary very often anymore. When I do, it's because it's a big beer and needs some time to age. I let it sit at ambient basement temp which is around 18C. If it's a lager, then it sits in the fridge as cold as I can get it.

Sometimes if I'm looking to get a really bright beer quickly, I will transfer to secondary and then move into the fridge for a few weeks as well. Most times, I just go straight to the polypin or the corny after two weeks in the FV.

To clear it out its a milestone shine on which I think will work better super clear. Also so I can dry hop with some nelson sauvin. Yum :-)

Keep it cool if you want it to help clearing. I've started using a secondary FV more regularly, I stick it in the coldest room in the house, which is around 12C, for a week or so, this really helps clear the beer prior to bottling/kegging.
