Hey all, Symmetry here. Brewing and living on the east coast at the moment. Family were brewers so I've spent a long time drinking homebrew and being around it. Brewed myself a small batch of wine many years ago but have kept the gear because I knew I'd want to get started again when I had the right time and space and well, now I'm hooked.
I've got 4 DJs going at the moment, I didn't want to spend a ton of funds making a mash from fruit in case I messed up the first few so I used preservative free non concentrate fruit juice and a white wine yeast (probably not the best but hey, it's an experiment right?). Got 2 made using 1 carton of Lidl Ace drink because it's amazing and it's non concentrated (i'm pretty sure) and I drink it all the time with 1 carton red grape juice. One made with 2 cartons of pressed peach juice and one made with 2 cartons of cloudy apple. All are using table sugar because it was what I had lying around and I don't have experience with dextrose in wine.
A little while after that I decided to give beer a go, I obtained a 25l fermenting bin and fitted it with spigot, 23l marking, thermometer and an airlock. I've used a Youngs brew harvest scottish heavy LME with 1kg of Muntons brew enhancer. Since this is all recent and I'm a hobbyfreak I thought I'd should come say Hi, because you'll be hearing from me again :)
