I am toying with the idea of trying a Scottish ale, some nice and malty - maybe even with a bit of liquorice - for a Christmas brew, so might like something a little stronger as well. Any suggestions? I'm not clever enough to make a recipe from scratch, so any help is much appreciated!

how about
25 litres
6620g pale malt
125g black malt
69g whitbread goldings at start of boil
23g whitbread goldings last ten mins of boil

you could throw in 590g granulated sugar dissolved first halfway through boiling
 
You could also caramelise the first runnings buy taking a gallon and boiling it down in a pan till you have a couple of pints of caramelised syrup which you add back to the boil. With Marks recipe you will have something akin to traquair house ale if you caramelise as well. :thumb:

you said you was thinking of brewing something else than a bitter :D

Not really sure what I'm brewing! Hahaha! I'm still trying to get my head round the different styles, and so far I can only really go by what they are called in the recipes I'm brewing - so far I've done a porter, a trippel (which may have turned out too weak to really be classed as a trippel - more a two-and-a-half!), a stout (conditioning) and a dubbel (fermenting). I just like the sound of a Scottich Ale, sounds nice with all it's maliness and a bit of strength, thought it would make a nice Christmas brew. So have I basically been handed a bitter recipe, not one for a Scottish Ale?
