Here's my situation - I have 4 types of White Labs yeast harvested from previous batches therefore there's a massive cell count in each batch. For my new setup of 40 litre brews, a simple starter will suffice with these yeasts.

I've recently taken delivery of 4 other yeast strains from White Labs and these are the usual "suitable for 5 gallon" vials. Obviously I need to build the yeast count up before pitching into my 40l brews, but I also want to split these vials before I pitch to keep the purest strain of yeast in addition to harvesting larger quantities from the brews themselves.

So here's my dilemma. I'm not planning to brew for a week or two so don't need starters or anything at the moment. However, I'm thinking about taking each vial and making a starter but leaving it to fully settle out then split into 3 containers. That way I could use one of those split batches to make a starter when I need to.

My other thought is to leave the vials as they are until I need them and make a starter as normal however, I pitch about 90% of it into the brew and keep back a wee bit to build up into a bigger sample.

Whats the thoughts on this? What would you do?
