Safale US-05 Yeast fermenting to 6.4%??

Hi guys I brewed a Schiehallion clone just over 2 weeks ago and bottled/kegged tonight. I was following the recipe in the Marc Ollsson book which gave the og as 1.048 and final gravity as 1.011. I didn't have any lager yeast so decided to go with safale 05. my OG was 1.052 but for some reason it has fermented right down to 1.004 giving me 6.4%? It's only meant to be 4.8% according to the recipe but now I've brewed a 'weekend beer' at over 6%.
The FV was in my spare room where its been around 18 degrees C for just over 2 weeks.Its also very cloudy when bottling, I can't even see my hand through a clear bottle and that was after 5 or 6 litres. I've had a taste and its quite nice to be honest, it's not too dry either so I'm not too worried but wondering what the hell happened for it to ferment right down, I guess thats a good sign? :wha:

US-05 can be a bugger for that, although the lowest I've got with it is 1008. I think the only way to stop is earlier is to crash cool and rack off to another FV, but if it tastes good well done, you'll just have to restrain yourself when drinking it :lol:
 
yeah I'll need to just save it for the weekends.to be honest it was probably the best tasting AG from the FV so far so we'll see what happens. :cheers:
 
I have also foun US 05 to be a voracious little tyke, it worked out well for me with my super dry IPA that was supposed to be 6.4% and ended up 7.1%. I've seen a brewing TV episode "lager work arounds" were they use 05 as an alternative to a lager yeast. I guess you have some kind of Alt beer on your hands, that's a good thing IMO :)
 
this is tasting fecking superb, awesome lemony citrusy aroma coming from it, I think my secret santa person will be getting a bottle of this!
 
I had a US-05 brew go down to 1.004 once, thought it was going to eat through the glass fermenter at one point :)

Tasted lovely though.

Do you know the mash temp?
Us05 takes ages to clear. Crash cooling and finings are what you need really.
 
I brewed 40l of 1045 gravity yesterday but mashed at 68c.
I'm fermenting 20l with us05 and 20 l with wlp028 Edinburgh yeast.

I'm hoping at 68c that it doesn't go much below 1010.
