With my next brew I want to try to get a similar grain bill to Batemans Combined Harvest which uses Pale, Wheat, Oats & Barley, i'm thinking

Pale 92%
Wheat 3%
Oats 3%
Rye 2%

The beer is a nice golden colour

Does anyone have experience of using Rye and can maybe offer advice on it's max use?

I made a smoked Black wheat rye beer a couple of years ago which was something like

50% Rauchmalz
22% Wheat Malt
22% Rye Malt
5 % Carafa Special III

I really enjoyed it, it was really nice.

Using that much wheat and rye means you are going to get a huge amount of glucans meaning a stuck mash is likely, So I mashed the wheat and rye separately at 35C for 30 minutes then heated it up to 65C and added it to the main mash for 60 more minutes.
 
I'm interested in Rye, I've got some Rye malt, Roasted Rye and Crystal Rye... and a few ideas.

I've made a Rye Stout with the Crystal and Roasted, its not quite ready to drink yet but sneaky tastes say its going to be pretty interesting.

The (extract) recipe: *this was also kind of a user-upper as I've gone AG now*
Rye Stout

Fermentables:
Hopped DME Light 10 EBC 1 lbs. 1.6 oz 500 grams 30.7%
Dried Malt Extract Pale 10 EBC 0 lbs. 15.8 oz 450 grams 27.6%
Dextrose Monohydrate 0 EBC 0 lbs. 7.0 oz 200 grams 12.3%

Roasted Barley 1220 EBC 0 lbs. 5.3 oz 150 grams 9.2%
German Roasted Rye Malt 450 EBC 0 lbs. 3.5 oz 100 grams 6.1%
Crystal Rye Malt 150 EBC 0 lbs. 2.8 oz 80 grams 4.9%

Just ideas you understand I'm lacking experience in brewing.

Ive used Rye a few times, i did a Roggenbier with 50% rye which was like engine oil but devine! Brewed as a wheat beer but personally as im not a fan of wheat phenols I think it would have been better done with a lager yeast!

But the best Rye beer I did was an IPA with 20% rye and it was devine!!! Added an extroadinary 'oily' mouthfeel to the beer and extra body! The subtle spicy rye flavours and aromas worked well with the fuggles hops I used...

Rye is great!!! Use it, now :thumb: lol
