Inspired by xyombee post on rosemary and bay leaf ale from Andy Hamiltons book, I was thinking of doing a pale ale probably high gravity, with some rosemary in it. But I want it to be hopped I was wondering if anyone had any thoughts on the hopping, what aroma hops would go with rosemary or should I just use bittering hops and use rosemary for aroma :hmm:

I have seen one american recipe which uses Oatmeal (not a problem I like oatmeal in a pale) and some of the american citrus hops (which I use in my Odd Job Pale), but didn't know if citrus notes and rosemary would go together?

Any thoughts?
 
Citrus and rosemary definitely go well together when cooking so I would assume they would work in a pale ale. :thumb:

I will be doing my pale ale soon so i may take a gallon of it and 'dry hop' with some rosemary post fermentation.
 
Thinking about it - I frequently use rosemary and citrus fruits when I cook chicken.

Perhaps instead of a pale ale you should try using this combination in the infamous Cock Ale! :rofl:
 
Now that would just be silly :lol: :lol:

but you have given me an idea for chicken with rosemary and lemon tyme.
