hi all i have made a very nice rice and raison wine (and put another on the go) the recipie makes approx 3 gallons after 1st racking clearing etc it states you can drink straight away or add campden tablets and store for 9 months,i bottled and drank 1 gallon and loved it
my confusion is do i have to leave the other 2 demi-johns for 9 months before drinking or is 9 months the drink by date
the wine fermented from 1100 to 988 so i would think it should keep ok
