Hi there you jolly brewers Ive just racked my rhubarb wine for the first time, i used 6lb fruit per gallon and made 3.5 gallons. its cleared very quickly than other wine ive made and doesnt smell very fruity at all infact just smells of slight egg. will the fruit come after the egg smell please . ???? :cheers: :hmm: :hmm: my rhubarb was large green sticks of fruit.
 
HI, I am no expert but have made a few batches of this myself. I know the eggy smell is gas and you need to keep giving it a good shake until all of the gas is out then it will smell like wine.

Mine does not smell nor taste too much of rhubarb, there is a faint taste of it. I have brewed mine fairly low in alcohol 8 or 9% I think so that I have more of a rhubarb taste rather than just alcohol and so that it is light and I can drink more of it. More like a refreshing summer drink rather than something I want to get drunk with.

I made some last year and have only just drunk it. It was the same, not smelling/tasting too rhubarby. A year later it has mellowed a lot and I can taste rhubarb in it. This lot is around 12%.

As for it being green rhubarb, I didnt know you could get it green. Mine was pink.
 
thanx mild man getting back to me. well thats ok i hope it will taste more of rhubarb 4 me we will see eh?? the green sticks were not in the sun for long think the sun makes it pink??? happy brewing all best :party: :cheers: :thumb:
 
I am intending to do a little experiment with one of my dj's of rhubarb. The idea came to me last night.
I am going to chop up one or two sticks of rhubarb and put sugar on the top of it. Leave it for 24 hours so that the sugar has time to disolve. Hopefully it will make a rhubarb syrup. I will sweeten one dj with it with the hope of it having a more rhubarb flavour.
 
fruit wise you have more tahn enough to bring out the rhubarb taste later, what we need to do is to degass the wine first.

as a rule i use the below recipe and it produces a quick and simple wine, but dont forget quick wines are normaly quick to drink and dont like massive storage times

1 kilo rhubarb
1 litre white or red grape juice
1 kilo of sugar
tea spoon of citric acid and stop and bottle at 1005
 
6LB does seem like a lot of rhubarb?

I only use 3 but the rhubarb flavour is definitely a little light.. it was very strong though and tended to make my eyes wobble!!
