I just do not know what to brew next..

Apart from some base grains I have a pretty much blank canvas so will need to order but just do not know what I should brew next so looking for some inspiration or ideas which I may grab

I will tell you what I have now

American IPA (Chinnok, Centennial and Citra)
Oatmeal Stout
Some American Hoppy Brown Ale left
Carbing up right now is a Slovenian Pilsner

Oh and I have some Cider but I am of course looking for beer ideas recipes.. or even grain kits

My only stipulation is I prefer things around the 4-6% bracket, not personally in to the supercharged stuff.

My brewing temps can be controlled at around 15-22..

So If anyone has any suggestions I welcome them..

I brewed this hoppy bitter/golden ale recipe I put together in the autumn and I'm just about to finish my last bottle. I've made a ton of big hoppy American ales over the last year or so but this one which is still hoppy uses UK hops (Brewer's Gold and First Gold) and ended up being my favourite beer of the year.

I used yeast from Wibbler Brewery but the Essex Ale strain by Whitelabs is meant to be from the same origin. I've asked Shane from the Homebrew Company to get it in (it is seasonal availability). He said it should be here in the next week or so.

Anyway, I really enjoyed brewing and drinking it.
 
A simple California Common / Steam Beer is easy to pull together, and is a bit different to the other beers you have in your current supply.

10% crystal, 90% pale (although I've been experimenting with adding a touch of rye, Munich and Victory), IBUs to 40-45 using only Northern Brewer, and mash a little on the warmer side for body. AFAIK MJ Cali Lager is the only dried steam yeast around (although I think I might try using Saflager at ale temps for mkIII) but it is a brilliant yeast IMO and goes off like a rocket.
 
Thanks both good suggestions fancied having a go at a steam beer and I want to try another Golden ale again with british hops, I did a single hop Golden EKG one last year, it was nice but a bit blander than I would have hoped so want to give it another go.

Annoyingly GEB dont seem to do First Gold.
 
You talking more belgian or american wheat?? I thought about doing a raspberry wheat at some point but thought I would wait for the spring when it is a bit warmer

Ah, now yes I remember that I think I posted on your IPA thread thinking I would have a go at that myself..!!:thumb:

I was in the same boat, heres what i have decided to brew;

A saison - have just recieved a parcel from Hbc including the 'stale' wallonian farmhouse yeast they are selling half price.

Session american ipa. I have just brewed a dipa which is lovely but over 8.5%. I want the same flavours but in a 4% beer - along the lines of Weird Beard Little Things That Kill.

After that i am planning a EKG single hop pale ale, probably about 4.5%.

By then it will likely be March, so by definition i will have to brew a Marzen!. I guess your 15c fermentation limit might be a issue - but you could brew in the same way as your recent pilsner?.

Other beers that would fit your 'brief' would include an APA, Sierra Nevada perhaps - or you could do a split batch, and turn half into a Dark Star hophead clone ( after all it is to all intents a watered down snpa!).

Or something Belgian.... a Patersbier or the weaker end of a Dubbel perhaps.

If you are enjoying your Oat Stout what about trying a Milk Stout. I brewed one in the autumn and am loving it.

Also enjoying a recently brewed Kolsch.

Pretty good if you're just ordering some hops.

Aside though they look really expensive to me

£6.55 100 grams of Citra for example on GEB they are £4.31

£4.99 100 grams Styrian Goldings on GEB £2.44
 
I'm lurking on here because I have a similar case of 'brewer's block' (as opposed to 'droop'.)

While the weather is cold I think a steam beer/CC/lager is a good shout as, if you have no temperature control like me, it's an easy case of putting it in the shed and letting it do its thing for a few weeks.

I really need to get better at planning my brews for the coming months; a lovely summery golden ale would be a great idea to brew now so that I have plenty for BBQ season but it just always seems to disappear. I think there are some rats that are right lushes in my shed.
 
I am thinking of going

1st Steam beer as suggestion
2nd Black IPA might look at Leons and look around
3rd Golden Ale like @simonh82
4th Wheat beer.. I have some harvested witbeir yeast in my fridge from last year I wonder whether its worth reviving

GH Witbier has 2.3kg of wheat malt and pale malt, 32g saaz at 70 mins (70 min boil), 25g of coriander and curacao orange peel at 10 mins, Belgian witbier yeast, 40pts at 4.5%.

This is probably a stupid question, Ive seen it on a few threads now but I can't figure it out, what does the GH stand for?

Its a book which has pretty much a solid recipe for every style, look it up its worth it

as it is Chewie thats the recipe I harvested the yeast from last year!! Was a nice refreshing orangey coriander drink
