Recommend Me Some Dry Yeast

Just popping to confirm that CML "five" has just dropped a 1.055 pale I brewed to FG in 3 days!
I do try to aerate as much as possible before pitching and this one was foamily aerated this time.

To be honest at the price they are for 10, it's not worth my while doing a starter unless it's a yeast that they don't do.

JFYI, while googling earlier I stumbled upon this article - it's a few years old now, not sure who the author is or their credentials but might be a useful reference if you're looking for a Fermentis or Lallemand dry yeast for a particular style.

For info there's also a follow up article about why you should rehydrate - I hear conflicting opinions about this but maybe still worth a look.
 
Funny I was looking through that about rehydrating. I found a experiment that noted sprinkling into wort only lost 5% compared to rehydrating. I'll see if I can find it.
 
As a follow up this is fermentis only, I always sprinkle into wort, all other dry brands I rehydrate.

Well I've only just started using dry yeast so far too early for me to make any comparison.

However, in "Simple Homebrewing" Deny Conn says he doesn't see any difference so he doesn't bother rehydrating.

I've never bothered with rehydrating Matt it is supposed to be quicker and not as stressful to the yeast but nothing I've ever noticed I just pitch dry

Yeah... the few I've used so far I've also just pitched dry and haven't especially noticed it being laggy.

And I'm comfortable my sanitising is good enough that nothing untoward is gonna happen during any slight extra lag time.

But that's my call - since this is a new area to me though I'm certainly not gonna sit here and tell anyone else how it should be done wink...
 
Yeah I only caution dry pitching Mangrove Jack's because I have had a few slow starters and phenolic dumpers because of them.

Been ok with Fermentis and Nottingham.
