80%+ of the flavour components in a beer come from the yeast as by products of fermentation, yeast selection, and handling (*), plays a vital part in the final taste development of beer.Rich82 said:Does lager yeast really make much of a difference and really make it taste more like a lager.
(*) There is no point in buying a lager yeast and fermenting at fluctuating temperatures around 18-22C that you would use 9and get away with) for an ale. Proper yeast handling means selecting the right yeast, pitching the right amount of healthy yeast, at the right temperature, and fermenting it at a consistent fermentation temperature, for the right duration.
If you can't/won't control the fermentation temp you are much better off buying and using a clean ale yeast at the cool end of its fermentation range, than trying to use a lager yeast.
