So back in June I brewed my Christmas beer.
Based on a clone of 'st Berndard'.
It turned out a bit stronger than expected at 12.8%.
Sadly it didn't carb. I suspect the high alcohol killed the yeast.
The beer is great and I've been happy with it as it is.
But I'd love to try it a little bit more on the carb side as was planned.
Do you think I could pop a few lids add a few grains of wine yeast or something for a re-yeast ??
 
I've just tried this with a quadruple and some champagne yeast. Been a couple of weeks now, so I'll try a bottle in the next day or two and let you know 👍
 
Sitting here drinking my quad, and it definitely has more CO2 than it did before. It's not quite got the 2.7vol I was aiming / primed for, but it's eminently more drinkable - lightened the body and dried it out. Chuffed.

Sweet, I'll give it a go👍
 
So I gave it a go.
Rehydrated a pack of wine yeast.
Then syringed 1mm into each bottle and recapped.
Used about half of the yeast for 20 330ml bottles🤞
