Apparently they will give a room a lovely smell if you pick them and leave them in a room for a few hours with the door shut. People used to slice them and dry them on top of their kitchen cupboards over winter.

I’ve just found a small one in my garden so looking into recipes too. :)
 
So, 2 years later. Didn't get any quince at all last year due to the late frost, gave the tree a prune last winter and was rewarded with 50 fruit this year.

Hagrid is right, I left them to ripen in the utility room and it was filled with a delicious scent. Froze, thawed and scratted them to get just over 1 gallon of juice. Not very sweet, but crisp, tart and astringent, takes the skin off your teeth like rhubarb. I had some pears left over from making Perry a few weekends back, so pressed those for another gallon of juice and some remaining apples for another two. Added 1kg of sugar to take the mix to 1,080 and it is now fermenting away
