Hi Guys,

I have just been given the opportunity to have my beer on at a festival in ............... 13 days! The difficult bit is, its not been made yet.

Is it possible?

The beer can be made tonight/tomorrow with yeast being added on Tuesday.

All the beers at the festival are gravity fed so I was just thinking whacking it in a polypin as after being tapped the firkins lose their condition when on gravity anyway I think.

What do you guys think? Would be doing a mild so not much work for the yeasties to do
 
I'd have thought you could brew, ferment, fine and clear the beer, then rack into the polypin in 9 or 10 days. It would then have 3 or 4 days to mature. Would offering such an immature beer be a good thing, or is it more likely to harm your rep as a brewer? You decide.

It wouldnt be open to the public, but will be passed to a room full experienced ale drinkers who I can soon say it is young as it was last minute thing.

A mild is quite nice young.

What would you use to fine quickly?
 
sounds like a horrible idea, green beer tastes like green beer, its called green for a reason, you could go with it and hope for the best, use gelatine to fine quickyl but rack out after a couple of days else youll have an unplesanst sludge at the bottom, if you are determined then try to hide it with a large hopsock addition to give it some oomph.
 
Idea sacked off completely, changed my mind to go with a wheat beer but then couldn't anyway because of HMRC
