Hello fellow wine makers.
Having just visited my local home brew shop I was very lucky to score free of charge ( apparently the enzime pkt was out of date ) a vinbrite filter kit.
Was very happy to take it off their hands.
I have just racked my gallon of pawpaw wine and added 1x camden tablet and 1/2 a teaspoon of potassium sorbate.
2 questions.
1) How long should I leave this before sweetening as it is very dry 990.
2) should I sweeten before or after using the vinbrite to polish.

I sampled this wine and my first thought were,,,,,,Hells bells, that horse shouldn't be working anymore :?

Hi there and welcome.
I'd be inclined to sweeten now to your taste and I wouldn't use vinbrite. If you can put the sweetened wine away in bulk in a cooler temp maybe a cellar or somesuch it will clear naturally and in doing this improves flavours/aroma as it ages.
 
Thanks for your advice, I will do as you suggest tho moving the wine to a cooler place is near on impossible in the tropics.
The coolest place I have is in my garage and the temp is around 22 deg at night and about 32 deg during the day.
LOL the price we pay for living in paradise.
