Hi all,
Batch primed and bottled just over 20 litres of ale with 80 grams of sugar (40gs of brewing sugar I had left over and 40gs of granulated) 9 days ago, which has been sitting in a warm place ever since. I opened a bottle today to check the carbonation, but it seems a little flat compared to commercial ale. Will leaving it in a warm place for longer improve things, or does leaving in the cold help? (I thought this was just to help it clear)

Give it another week or so then in the cold for a couple of weeks. You need to give it time to carbonate and condition :thumb:
 
I would say deffinately warm! I have had cider take as long as 4 months to carb up but some in as little as 2 weeks, just be patient and should be ok. I personally prefer to prime each bottle rather than the whole batch and this works well for me.

Had a feeling that the 5 days suggested in the instructions was a bit optimistic!

All timings in the kit instructions are optimistic. They want you to believe you can make and be drinking beer within 2 weeks. 2 months is more like it :thumb:
 
Its actually the cold conditioning which allows the co2 to be absorbed back into the beer so that when it opens it fizzes. I have a barley wine which has taken 2 years to condition, and even now they are a bit hit and miss. :lol: :lol:
 
Thanks grey, thought I had read something about the cold stage allowing the co2 to be absorbed back into the liquid, couldn't find the thread though.
