Hi there, me again.

Just been to my local HBS and found that they were out of Coopers Stout :( . Because i am so bloody impatient I bought a Brewmaker Irish Velvet Dark Stout Kit to go with the Coopers I already had to make the 10% ish superbrew.

On arriving home Mr Postie had delivered four packets each of Nottingham and Safale S-04 yeasts from Barley Bottom.

My questions are

Would the Brewmaker kit make much difference considering I am using 1kg of dark spraymalt.

Barley Bottom recommend freezing the S-04 until required, would you advise doing the same with the remaining Nottingham Yeasts.

I'm not a Muddydisco, nor do I play one on TV, but

Can't answer for the stout kits apart from to say with a strongly flavoured beer the differences are likely to be minimal. It is the pale delicate beers that show major differences.

As for yeast it should be best practice to store it as cold as possible for the type of medium . . . For dried you are talking in the freezer, for liquid/slants/plates then below 4C . . . but above freezing.
