I am about to brew an 11.5L Chinook/Amarillo IPA from a recipe that I have created based on other recipes I have used. I am wondering if anyone has any thoughts on using Chinook as the bittering hops and also if 16 grams at the start of the boil is o.k for an 11.5 brew. I would also appreciate any thoughts on the later additions. Am I adding too many hops for the 11.5L brew?


Chinook/Amarillo IPA

Mash Time: 1 hour at 65 degrees

Boil Time: 1 hour 10 mins


Grain Bill

Maris Otter 3000 3450 grams


Hops


Chinook 16g At start of boil


Amarillo 8g For last 15 minutes

Chinook 8g For last 15 minutes


Amarillo 8g For last 5 minutes

Chinook 8g For last 5 minutes


Amarillo 22g At turn off

Chinook 22g At turn off

Depends how long you hopstand / steep the final ones for. Sorry I cant speak to the flavour combination.

Are you planning on dry hopping too? I'd knock back the first chinook probably.... it looks quite heavy.

These are some suggestions for less bitterness from beersmith that keep the ratios. You just just put less 60 min in.

Depends what you are going for, but modern IPA's tend to be loaded with hops at the later stages to ensure that hop's essential oils are not isomerised by the heat and they impart aromas instead of bitterness.

Personally I'd do it if you want the nice fresh smells and flavours. :-) You tend to use quite a lot though.

Here's brewdog's famous Punk hop list so you get an idea.

Even the old English IPAs used to have some hops added to the barrel.

Thanks for your help. You give some suggestions for less bitterness from beersmith saying, “add just put less 60 min in”. According to beersmith that would be 13.47g rather than 16g.

Then for later hop additions Beersmith suggests:

Amarillo 6.74 rather than 8g for last 15 minutes

Chinook 6.74 rather than 8g for last 15 minutes


Amarillo 6.74 rather than 8g for last 5 minutes

Chinook 6.74 rather than 8g for last 5 minutes


Amarillo 18.53g At turn off

Chinook 18.53g At turn off


Would you go with beersmith’s lower estimate for the later hops rather than what I came up with in my original post?

Having gained from you response to my post I am now wondering if I should use Beersmith for creating my own recipes rather than guessing. So I installed the trial version. Based on your response I thought there would be a way that Beersmith would correct my ingredients when adding too much or too little as you have done, but I cannot find a way to do that in Beersmith. I created a dummy recipe but Beersmith just added whatever I entered. How did you come up with your alternative suggestions?

Hope I am not bothering you with this. It’s just that it would be so helpful to have a way of correcting my own estimates for a recipe as you have done.
 
No bother, but I'm really not a pro brewer, so - like most things on the internet dont take my ideas as gospel.

In beersmith you can click on the colour bars to then adjust the bitterness / gravity / colour to your liking.

I'd probably get some other malt in there to make it a richer colour.

Take a look at what other people are doing recipe wise for IPAs. There's now so many ways of skinning a cat.

Hops wise, I've used them both I think chinook is more powerful from memory, so you may want to take that into consideration and rebalance.

I've attached a beersmith file you can import. I didnt know what yeast you were thinking of so just put trusty US-05. No idea about your water chemistry either so you will have to add that (if you know it).

Ditch the other malt and go back to pure otter if you feel, but it could work better colour wise.

I think it should be drinkable at least, possibly even good :-)

One more question. Would you say Brewsmith is worth the purchase price? And would I need to further upgrade from the basic purchase to gain the benefits? Thanks again for your help.

Personally I think it's fantastic, so good for tweeking recipes, checking your gravities, scaling up or down. The more you use it the more you work out all the efficiencies for your brewhouse, and the closer to the intended recipe you can get.

The upgrades don't bring much to the party. I suggest you use it for the next 30 days for free and see what you think. Try to brew with it as much as possible, or at least play round with the options and recipes.

I use it in combination with one of the water spreadsheets like brew n'water or palmers.

How did this one turn out mate. Ive got these two hops coming this week
