Wheeler says that bottling from the fermenter is a barbaric process and that when bottling beer you should cask it before bottling. I've never done this and simply let the beer clear down a little in the FV and bottle after 10 - 14 days from pitching the yeast. So how much does the beer benefit?

Wheeler also does not recomend doing a secondary, but carries that out in the cask. If you follow his technique, it is more traditional, but the additional steps are possible infection routes. I have found that simply leaving the beer in the fermenter for a few more days achieves pretty much everything that happens in the cask anyway, without all that moving about. . . . Commercial breweries do it to free up fermenters to re use, we don't need to do that (RIS not withstanding :D )
